      Muah Chee 101 – Boil, Microwave, Pan-fry & Steam

      We wrote on how to make muah chee in 10 minutes using the microwave previously and we received quite a few questions from readers asking whether it’s possible to make muah chee using other cooking methods.

      We tried various cooking methods (i.e. steam, pan-fry & boil) to make muah chee in this post.

      First and foremost, prepare the mixture using the following recipe.

      Ingredients – Serves 4 (read: Similar to 3 packets of muah chee sold in pasar malam)
      – 120g glutinous rice flour
      – 180ml water
      – 2 tablespoons of cooking oil
      – 150g of peanut/sugar mix

      METHOD 1. STEAM

      I placed the bowl of mixture in boiling water and steamed it for 7 minutes. The outcome is a solid sticky white paste.

      Steam method – SUCCESS

      METHOD 2. BOIL

      I poured the mixture in the boiling water. The white gluey paste formed in about 3 seconds (almost like egg whites). The paste was too soft and watery. It does not have the chewy muah chee texture.

      Boil method – FAILURE

      METHOD 3. Pan- Fry

      I poured the mixture onto the hot non-stick pan. The white paste formed after 10 seconds – again the outcome is a solid sticky white paste.

      Pan-fry method – SUCCESS

      METHOD 4. MICROWAVE

      Still my preferred method. It just takes 3.5 minutes in the microwave.

      Microwave method – SUCCESS

      Cut the sticky paste into small cubes and coat them well with the peanut/sugar mix.

      So which cooking method produces the best muah chee?

      It’s a tie between the microwave and steam methods. Both cooking styles produced a solid chewy paste which is ideal for making muah chee.

      The boiled method is a disaster. The outcome is hardly edible – soft and lifeless.

      Verdict – There are many different methods to make muah chee and none of them took more than 10 minutes. So…. make your own muah chee today!

      P.S. You can get black sesame powder in Shine Korea Supermarket to replace the peanut/sugar mix!

      Luncheon Meat Riceball (Spam Omusubi) in 10 minutes for Busy People

      Have you heard of Spam omusubi (aka Luncheon meat riceball)? Apparently EVERYONE in Hawaii loves it! It’s a fusion dish of Japanese (obviously the rice…) and American (Spam).

      My Japanese colleague (Kaya) luckily knew how to make it! I told her my two requirements: Convenience – it has to be made in our office pantry, and REALLY quick – max 10 min! You can tell I’ve been ridiculously busy at work lately.

      Ingredients – Serves around 4 medium size riceballs
      Cook 1 cup of Japanese or Korea rice
      3 tablespoons of teriyaki sauce
      1 can of luncheon meat
      2-3 sheets of dried seaweed (Optional)

      We bought everything at NTUC before our mini “cookout” in the pantry.
      FairPrice Koto Kome rice – It weirdly states “Australia rice” but this is actually those sticky Japanese rice. Get this one because it’s the house brand and as we all know, that means it’s cheap!
      Kikkoman teriyaki sauce – Japanese like the Kikkoman brand. This sauce is great for grilled fish and meat too, bring it to your next bbq!
      Ma Ling luncheon meat – Much cheaper and tastes similar to SPAM. 
      Dried seaweed – Basically pick the smallest pack possible because if you leave dried seaweed in tropical Singapore, it will get moist and lose its crispiness.

      TIP – If you do not want to invest in a bottle of teriyaki sauce, you can make your own sweet sauce with a few simple ingredients from the pantry.
      HOW? Mix 2 tablespoons of soy sauce, 1 tablespoon of sugar and 2 tablespoons of hot water. 🙂

      Bring cooked Japanese rice to office. It has to be Japanese or Korean cause they have the right sticky consistency to make riceballs. Please don’t use Jasmine rice – grains too dry, Basmati rice – grains too long, or the Chinese glutinous rice – grains way too sticky. Bring also the sliced luncheon meat – about 0.5cm thick.

      When at office, put both rice and meat in the microwave. Rice should be warm, not hot (about 45seconds) and meat needs to be hot (about 1.5min).

      Pour teriyaki sauce over the rice and luncheon meat. Mix the rice immediately but let the meat marinate in the sauce for a bit.

      Place cling wrap on your hand and add some rice, then the luncheon meat and then rice again on top. Close the cling wrap and make a mountain shape in your hands and squeeze GENTLY. You will get a nice triangle riceball.

      For those who are artistic and gifted i.e. Kaya: Try to make it into a triangle (Left)
      For those who are normal (like me): Just make it into a ball (Right) because 1) You don’t have the time 2) you probably don’t have the skills.

      Here you go! Your original luncheon meat rice ball in 10 minutes.

      If you have more than 10 minutes – Have some ”aburi fun”with a lighter. The slightly brunt rice tasted really awesome!
